A healthy, dairy free dessert of roasted nectarines, bursting with flavour.
Preheat oven to 190°C/gas mark 5.
Scoop out some of the flesh of the nectarines and chop into small pieces.
Mix together Pure spread, sugar, 25g nectarine with the Pure mixture and put a tablespoon of the filling into the centre of each nectarine.
Arrange the nectarines in an ovenproof dish and cover with tinfoil.
Bake for 20 minutes.
Remove tinfoil and bake for another 10 minutes or until they are tender. Scatter over the remaining ginger biscuits before serving.
Dairy-free ice cream makes an ideal accompaniment.
Tips: For summer dining, just place in foil and cook on the BBQ.
Make this recipe more indulgent by replacing the almond essence with Amaretti Liqueur.
