WHOLE ROAST CHICKEN WITH GARLIC AND HERB PURE SPREAD

Ingredients

 1.80 kg WHOLE ROASTING CHICKEN
 2 CLOVES OF GARLIC (FINELY CHOPPED)
 1 tbsp FRESH PARSLEY (CHOPPED)
 1 tbsp FRESH THYME (CHOPPED)
 1 tbsp FRESH ROSEMARY (FINELY CHOPPED)
 A PINCH SALT & GROUND WHITE PEPPER TO SEASON

Method

Pre-heat oven to 190°C/gas mark 5.

Combine the Pure spread, garlic chopped herbs and seasoning.

Insert a dessert spoon at the neck end of the chicken between the skin and the flesh. Release the skin over the breast of the chicken then spoon in the garlic and herb Pure spread.

Smooth the Pure spread mixture to make sure that it is evenly distributed it under the skin.

Fold the excess skin under the chicken and place in a 35cm roasting tin.

Roast in a hot oven and baste with the flavoured Pure spread and chicken juices during cooking.

Cook for approximately 1 hour 40 minutes or until the juices run clear. Serve with saffron potatoes.

Tips: Herbed Pure spread can be made in advance and chilled or frozen. It will keep for three or four days in the fridge or a month in the freezer.
