Recipe Ingredients

25G PURE SPREAD
1 RED ONION, FINELY CHOPPED
125G CHESTNUT MUSHROOMS, CHOPPED
1 SMALL POTATO, CHOPPED INTO SMALL DICE
8 MEDIUM EGGS
200ML SOYA MILK
PINCH SALT AND GROUND WHITE PEPPER
1 TBSP FRESH PARSLEY, CHOPPED

Method

Preheat oven to 180°C/gas mark 4. Grease a standard muffin tin with Pure spread.

Beat the eggs with soya milk and season.

In a frying pan melt the Pure spread and fry the onions, mushrooms and potatoes until softened. Pour the egg mixture into the muffin tray and add some of the vegetable mixture and some chopped parsley into each well.

Bake in the oven for 35-40 minutes, until set.

Serve hot or cold with salad.
