Potato and Chive Griddle Cakes

A quick way to liven up potatoes. These delicious spuds are sure to become a firm family favourite to many midweek meals.

POTATO AND CHIVE GRIDDLE CAKES

 50 g PURE SPREAD
 450 g FLOURY POTATOES (PEELED, COOKED, COOLED)
 100 g GLUTEN FREE FLOUR
 2 tsp GLUTEN FREE BAKING POWDER
 1 tbsp CHOPPED CHIVES
 A LARGE PINCH SALT & PEPPER

Preheat griddle

Sieve the flour and baking powder together, rub in 25g of Pure spread until the mixture resembles fine breadcrumbs. Stir in the chives.

Mash the potatoes, add 25g of Pure spread and season.

Thoroughly mix the potato and the flour mixture together.

Turn out onto a floured surface and knead lightly.

Roll out to a thickness of 1cm. Cut into triangles and grease the griddle with Pure.

Cook for 4-5 minutes each side. Serve hot.
