Simple, quick and easy to make these crispy cookies make an ideal cooking recipe for children.
Preheat oven to 180°C/gas mark 4.
Grease a large baking sheet with Pure spread.
Cream Pure spread and sugar until light and fluffy, beat in the egg and essence.
Work in the flour and mix well. Form the dough into walnut-size balls with wet hands. Roll in the rice crispies until well coated.
Place on the baking sheet and press lightly.
Bake for 15-20 minutes until light golden in colour.
Remove the cookies from the oven and allow to stand for 1 minute before transferring to a cooling rack.
Store in an airtight container.
Tips: You can also roll the cookies in desiccated coconut.
