Chunky Choc Nut Cookies

Nothing beats a cookie fresh from the oven. Chunky nuts and chocolate chips make these dairy free cookies absolutely delicious.

 115 g PURE DAIRY FREE SUNFLOWER
 100 g PLAIN CHOCOLATE
 100 g BLANCHED HAZELNUTS
 115 g SOFT LIGHT BROWN SUGAR
 1 SMALL EGG OR EGG REPLACER (BEATEN)
 150 g SELF-RAISING FLOUR
 75 g SCOTTISH PORRIDGE OATS
 1 tsp VANILLA ESSENCE

Preheat oven to 180C, Gas Mark 4.

Coarsely chop the chocolate and the hazelnuts.

Put the Sunflower Pure and sugar in a bowl and cream together with a wooden spoon until soft and fluffy.

Add the egg, vanilla, flour and oats and stir until well mixed. Stir in the chocolate and hazelnuts.

Put 6 large dessert spoonful’s of the mixture well spaced apart on two lined baking sheets.

Bake for 10-12 minutes until well-risen and pale golden brown.

Leave to cool on the baking sheets for 5 minutes before lifting onto a wire rack to cool completely.
