A quick, zingy supper, perfect for when you want to add a bit of zest to your midweek meals.

CHILLI AND LIME CHICKEN SKEWERS

 50 g PURE SPREAD (MELTED)
 500 g (4) LARGE CHICKEN BREASTS
 2 CLOVES GARLIC (FINELY CHOPPED)
 2 tbsp FRESH CORIANDER (CHOPPED, PLUS EXTRA TO GARNISH)
 1 tsp BLACK PEPPERCORNS (CRUSHED)
 ½ LARGE RED CHILLI (FINELY CHOPPED)
 1 LIME, JUICE AND RIND
 1 tbsp DEMERARA SUGAR
 1 tbsp GLUTEN-FREE SOYA SAUCE

Slice the chicken breasts lengthways into 1cm thick strips.

Combine the remaining ingredients in a large bowl. Add the chicken strips and mix well.

Thread the chicken onto bamboo skewers and cook on preheated griddle pan greased with Pure spread.

Cook for 3 minutes on each side or until cooked and well browned.

Serve with a sweet chilli dipping sauce.
