Chilli and Lime Chicken Skewers
A quick, zingy supper, perfect for when you want to add a bit of zest to your midweek meals.

50G PURE SPREAD, MELTED
500G OR 4 LARGE CHICKEN BREASTS
2 CLOVES GARLIC, FINELY CHOPPED
2 TBSP FRESH CORIANDER, CHOPPED, PLUS EXTRA TO GARNISH
1 TSP BLACK PEPPERCORNS, CRUSHED
1 LIME, JUICE AND RIND
½ LARGE RED CHILLI, FINELY CHOPPED
1 TBSP DEMERARA SUGAR
1 TBSP GLUTEN-FREE SOYA SAUCE
Slice the chicken breasts lengthways into 1cm thick strips. Combine the remaining ingredients in a large bowl. Add the chicken strips and mix well.
Thread the chicken onto bamboo skewers and cook on preheated griddle pan greased with Pure spread. Cook for 3 minutes on each side or until cooked and well browned.
Serve with a sweet chilli dipping sauce.
