Chilli and Lime Chicken Fajitas

Fajitas bring fun and excitement to any supper time. This recipe is sure to delight all the family.

 75 g PURE SPREAD, MELTED
 4 (500G) LARGE CHICKEN BREASTS, CUT INTO 2CM STRIPS
 2 CLOVES OF GARLIC (FINELY CHOPPED)
 2 tbsp FRESH CORIANDER (CHOPPED)
 1 tsp BLACK PEPPERCORNS, CRUSHED
 1 LIME, JUICE AND GRATED RIND
 ½ LARGE RED CHILLI (FINELY CHOPPED)
 8 WHEAT FLOUR OR CORN TORTILLAS
 175 g GUACAMOLE
 CRISPY LETTUCE AND RED ONION SLICES

Preheat oven to 220°C/ gas mark 7.

Put melted Pure spread in a large bowl and mix with garlic, coriander, black peppercorns, lime juice and rind and chilli.

Add chicken strips and coat with the Pure spread mixture.

Place strips onto a 30cmx23cm baking sheet and put in the oven for 20 to 25 minutes. Turn chicken over, halfway through cooking time.

Serve with tortillas, crispy lettuce, red onion slices and guacamole.
