CHILLI AND LIME CHICKEN FAJITAS

75G PURE SPREAD, MELTED
500G OR 4 LARGE CHICKEN BREASTS, CUT INTO 2CM STRIPS
2 CLOVES OF GARLIC, FINELY CHOPPED
2 TBSP FRESH CORIANDER, CHOPPED
1 TSP BLACK PEPPERCORNS, CRUSHED
1 LIME, JUICE AND GRATED RIND
½ LARGE RED CHILLI, FINELY CHOPPED
8 WHEAT FLOUR OR CORN TORTILLAS
CRISPY LETTUCE AND RED ONION SLICES
Preheat oven to 220°C/ gas mark 7.
Put melted Pure spread in a large bowl and mix with garlic, coriander, black peppercorns, lime juice and rind and chilli. Add chicken strips and coat with the Pure spread mixture. Place strips onto a 30cmx23cm baking sheet and put in the oven for 20 to 25 minutes. Turn chicken over, halfway through cooking time.
Serve with tortillas, crispy lettuce, red onion slices and guacamole.
